Chia seeds are one of the most nutritious foods on the planet. They are loaded with fibre, protein, omega-3 fatty acids and various micronutrients.
For a delicious, homemade and healthy pudding, combine half a cup of chia seeds, 2 cups of coconut or almond milk, 2-3 tablespoons of cocoa powder to taste, 1 tablespoon of agave syrup or honey or maple syrup and 1 teaspoon of vanilla in a blender. Blend the mixture until it is smooth and allow the mixture to thicken in the refrigerator for 10 minutes.
Chia seeds can also be used as an egg substitute in cakes: mis 1 tablespoon of chia seeds with 3 tablespoons of water and let the mixture soak for 10 minutes in the fridge.
